Dutch Ovens

 

We are avid Dutch Oven fans.  I wonder if it is because I was born and raised in Utah, the Dutch Oven capital of the USA.

Take a closer look at the Lewis & Clark Commemorative Edition DO in the first picture.   In the second picture there are 2-12" & 1-8" DO, lid handles, Dutch oven carrying cases, leather gloves, scrub brush, Wisk broom, and a thermometer.

 

Recipes:
 

Stuffed Turkey-Meat Loaf

Meat

1-Pound Ground Turkey

1-Pound Ground Breakfast Sausage (Quality)

1 med. white onion - chopped

2 sticks celery - chopped

2 eggs

1-pks Lipton Onion Soup Mix

1-cup breadcrumbs

Salt & Pepper to taste

 

Stuffing

6 - 8 cup batch of your favorite stuffing mix.

   (I like corn bread stuffing)

 

Turkey Gravy

32 oz. of your favorite Turkey Gravy.

   (I buy ready-made, already in a jar)

 

Instructions

Mix together all of the ingredients in the "Meat" section to make a good meat loaf.

Place 2/3 of mix in DO.

Spread the meat evenly over bottom and 1/2 way up sides, creating a hollow.

Place entire amount of stuffing in center of meat mix, and press flat to fill hollow.

Place the rest of the meat mix on top of the stuffing and meat already there.  This should be pressed down and spread to sides of DO.

 

Cooking

You are going to want to cook this for at least 1.25 hours.

I use 10 briquettes on bottom and 14 on top.  This gives a cooking temp of 350+ degrees. Adjust to your conditions. (Remember lots of different elements effect cooking temps.)

 

While loaf is cooking, place your favorite gravy in a small DO.  You will want to heat this before serving.  I use 5 coals bottom, 8 coals top and bring it to a simmer.  Remove the extra coals, leaving just enough to keep the gravy hot.

 

Check your loaf for doneness.  I use a instant read thermometer for this.  I always want at least 170 degrees.  If needed, continue cooking until it is done.

 

When serving, cut a nice wedge of this loaf / stuffing, and place on a plate, then slather a bunch of your gravy over it.  mmmmmmm!
